A Study on the Santary State of Goat Milk

Abstract
About 800 to 1,000kg out of 19,000kg of goat milk produced per day were treated at the cooperation of goat milk producers and the remaining part were treated at the producer¢¥s homes and delivered to the consumers in Seoul area.
A study was carried out to evaluate the sanitary state of the home-treated goat milk during the period from July 15 to September 25, 1968.
Main results could be summarized as follows:
1. Twenty-five samples out of 83(30%) exceeded 0.20% of acidity, the acidity limit of qualified milk in Korea.
2. Forty-four samples out of 83(53%) passed the qualification test of specific gravity, 15(20%), and 23(27%) below the limit.
3. Thirty-eight samples(45%) were not qualified at the test of fat content with the limit of above 3.6%.
4. Nineteen samples(22%) were qualified at the standard plate count and 27(32%) passed coliform group test with negative results.
5. The contents of water salt, sugar and protein were 86.6%, 0.1159%, 4.46% and 3.9% respectively.
